This first posting is for you.

Baking bread is easy, fun and does not take any time.
One bakes bread for many reasons ---- taste, control of flavors and  ingredients,  no additives or preservatives, increased quality, health benefits, more nutrients, the smell of baking fills the house, cost savings, gratification and just plain ole fun of being in the kitchen with a glass of wine, music playing, candle light and the anticipation of eating the first slice with a glob of butter.


Bread of Life

3 cups flour ( I use 2 cups King Arthur flour and 1 cup rye flour)
1 tsp yeast
2 tsp salt
1 cup water
1/2 cup beer
1 tbsp. vinegar

Combine all ingredients. Form a ball. Cover with a wrap and set overnight to rise or ~ 12 hours. Then dust counter with flour and knead the dough 10 times. Mold into a circle and place onto a sheet of parchment paper and cover with a wrap and rise for about 2 hours. Score the top of the loaf with a sharp knife. Place the loaf and the parchment paper into a hot cast iron dutch oven (heavy pot with lid) (the pot must be preheated in the 375F. oven) and cover. Lower the temperature to 340F and bake for 30 minutes. Remove the lid and continue to bake for another 20 minutes or until done. It is done when tapped with a hollow sound. Let cool on a rack and then share and enjoy.

Add gluten if using rye flour.

There is tea and then there are herbal teas. Teas are a must for any kitchen.
The difference between tea and herbal teas are the amount of caffeine.
Herbal teas offer lots of choices cause they're made from leaves, spices, blossoms,
petals, seeds, roots, rose hips, lemon peel, dried fruit and berries.
Herbal teas offer nutritional benefits (antioxidants) and medicinal (calming, soothing nausea
ease pain)
