It grows like a vegetable, but it is cooks and eats like a fruit.
It is also the first, of the Season, to ripen. When ripe, the fruit is green and crisp.
And the leaves are poisonous. Its the Rhubarb plant that anyone can grow.

The classic dishes for rhubarb combines it with strawberries for pie or jams or crumbles.
But strawberries are not ripe here yet.
So I decided to make a rhubarb compote.
Compote is fruit sauce for yogurt or ice-cream or to spoon over cake.

We made rhubard fruit leather in my herb class. It was rhubard, strawberry, elderberry flower, psyllium, and some other herbs for spring detoxing. Rhubarb is a great early spring bitter according to my herb professor.
