Is it a Fruit or a Vegetable?


It grows like a vegetable, but it is cooks and eats like a fruit.
It is also the first, of the Season, to ripen. When ripe, the fruit is green and crisp.
And the leaves are poisonous. Its the Rhubarb plant that anyone can grow.



The green stalk plant is a more rubust grower
than the red stalk plant, but the red stalks are more popular.
The stalks are full of vitamin C and K.

The classic dishes for rhubarb combines it with strawberries for pie or jams or crumbles.
But strawberries are not ripe here yet.
So I decided to make a rhubarb compote.
Compote is fruit sauce for yogurt or ice-cream or to spoon over cake.

  1. We made rhubard fruit leather in my herb class. It was rhubard, strawberry, elderberry flower, psyllium, and some other herbs for spring detoxing. Rhubarb is a great early spring bitter according to my herb professor.
